  • 1 cup quinoa (rinsed)
  • 2 cups vegetable broth or water
  • 2 cups assorted vegetables (bell peppers, zucchini, etc.)
  • 2 tbsp olive oil
  • ¼ cup fresh herbs (basil, parsley), chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Rinse quinoa under cold water until the water runs clear. In a medium saucepan, combine quinoa and broth/water; bring to a boil, then reduce heat to low and simmer for 15 minutes.
  3. Dice vegetables into bite-sized pieces, toss with olive oil, salt, and pepper. Spread evenly on a baking sheet.
  4. Roast vegetables for 25-30 minutes until golden brown.
  5. Fluff cooked quinoa with a fork and stir in lemon juice and chopped herbs.
  6. Combine roasted vegetables with quinoa in a large bowl; mix gently.
