- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1/2 cup extra virgin olive oil
- 1/4 cup freshly squeezed lemon juice
- 2 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp red wine vinegar
- 1 tbsp honey (optional)
Instructions
- Rinse chicken breasts under cold water and pat dry with paper towels.
- In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, pepper, and red wine vinegar until well mixed.
- If desired, add honey to the marinade for sweetness.
- Place chicken in a resealable bag or shallow dish; pour marinade over chicken ensuring it’s fully coated. Seal or cover tightly.
- Refrigerate for at least 30 minutes (up to overnight) to allow flavors to meld.
- Preheat grill to medium heat or oven to 400°F (200°C).
- Grill chicken for 6-7 minutes per side or bake in the oven for about 20 minutes until fully cooked.
- Let rest for a few minutes before slicing and serving.
