  • 2 tbsp extra virgin olive oil
  • 1 cup bell peppers, thinly sliced (mixed colors)
  • 1 cup zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves (for garnish)

Instructions

  1. In a large pot of salted boiling water, add pasta and cook until al dente (about 8-10 minutes). Reserve some pasta water before draining.
  2. In a skillet over medium heat, heat olive oil. Add bell peppers and zucchini; sauté for about 5 minutes until softened.
  3. Stir in minced garlic and cherry tomatoes; cook for an additional 2-3 minutes until fragrant and tomatoes begin to burst.
  4. Add drained pasta to the skillet with veggies. Toss well and add reserved pasta water as needed for moisture.
  5. Remove from heat, sprinkle with Parmesan cheese, and toss again. Garnish with torn basil leaves before serving.
