Instructions
- Rinse the lentils under cold water. In a saucepan, combine lentils with 3 cups of water and bring to a boil. Simmer uncovered for 20–25 minutes until tender but firm. Drain and let cool.
- While the lentils cook, chop the cherry tomatoes, dice the cucumber, and finely chop the red onion.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to create the dressing.
- In a large bowl, mix cooled lentils, chopped vegetables, and dressing until well combined.
- Garnish with fresh parsley before serving.
