Ingredients

  • 1 cup green lentils
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ½ red onion (finely chopped)
  • ¼ cup fresh parsley (chopped)
  • ¼ cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils under cold water. In a saucepan, combine lentils with 3 cups of water and bring to a boil. Simmer uncovered for 20–25 minutes until tender but firm. Drain and let cool.
  2. While the lentils cook, chop the cherry tomatoes, dice the cucumber, and finely chop the red onion.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to create the dressing.
  4. In a large bowl, mix cooled lentils, chopped vegetables, and dressing until well combined.
  5. Garnish with fresh parsley before serving.
