  • 1 lb large raw shrimp (peeled and deveined)
  • 8 oz Andouille sausage (sliced)
  • 1 cup bell peppers (chopped)
  • 1 medium yellow onion (chopped)
  • 4 cloves garlic (minced)
  • 1.5 cups long-grain rice
  • 14.5 oz canned diced tomatoes
  • 3 cups low-sodium chicken broth
  • 2 tsp paprika
  • 1 tsp cayenne pepper (adjust to taste)
  • 1 tsp dried thyme
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Green onions and parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion and bell peppers until soft (about 5 minutes).
  2. Add minced garlic and sliced Andouille sausage; cook until sausage is browned (about 4 minutes).
  3. Stir in diced chicken thighs; cook until golden brown on all sides (around 6 minutes). Then add shrimp and cook until pink (roughly 3 minutes).
  4. Mix in rice thoroughly before adding canned tomatoes and chicken broth; bring to a boil.
  5. Sprinkle paprika, cayenne pepper, thyme, salt, and pepper over the mixture. Stir well, reduce heat to low, cover tightly, and simmer until rice absorbs liquid (approximately 20 minutes).
  6. Fluff jambalaya with a fork and garnish with chopped green onions or parsley before serving.
