  • 4 boneless skinless chicken breasts
  • 1 cup Greek yogurt
  • 2 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 4 garlic cloves, minced
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp chili powder
  • 2 medium cucumbers, chopped
  • ¼ cup fresh dill, chopped
  • ¼ cup fresh mint leaves, chopped
  • ½ cup crumbled feta cheese
  • Salt to taste

Instructions

  1. In a bowl, mix Greek yogurt, olive oil, lemon juice, minced garlic, paprika, cumin, and chili powder.
  2. Coat chicken breasts in the marinade and refrigerate for at least 30 minutes.
  3. Preheat grill or oven to 400°F (200°C).
  4. Grill or bake chicken for 6-7 minutes per side until they reach an internal temperature of 165°F (75°C).
  5. While cooking, prepare the cucumber salad by combining cucumbers with dill and mint; drizzle with olive oil and season with salt.
  6. Top salad with crumbled feta cheese before serving alongside the grilled chicken.
