  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 4 garlic cloves, minced
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • ¼ cup pine nuts (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, heat 1 tablespoon of olive oil. Add garlic and sauté until fragrant, then add spinach and cook until wilted (about 3 minutes).
  3. In a bowl, mix wilted spinach with feta cheese, pine nuts (if using), oregano, basil, salt, and pepper until well combined.
  4. Place each chicken breast flat on a cutting board, spoon filling onto each breast, roll tightly, and secure with toothpicks if needed.
  5. Heat remaining olive oil in the skillet over medium-high heat and sear the chicken rolls seam-side down until golden brown on all sides (about 5 minutes per side).
  6. Transfer the rolls to an oven-safe dish and bake for 20-25 minutes or until internal temperature reaches 165°F (75°C). Let rest before slicing.
