Ingredients

Scale
  • 1 lb lean ground beef
  • 1/2 cup Italian-style breadcrumbs
  • 1/4 cup freshly grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh parsley
  • 6 cups low-sodium vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup finely chopped carrots
  • 1 cup finely chopped celery
  • Salt and pepper to taste
  • 1 cup small pasta (cooked separately)

Instructions

  1. Prepare the Meatballs: In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, basil, parsley, salt, and pepper. Mix gently to avoid overworking the meat. Form into bite-sized meatballs.
  2. Sauté Vegetables: Heat olive oil in a large pot over medium heat. Add carrots and celery; sauté until soft and fragrant (about 5 minutes).
  3. Add Broth & Tomatoes: Pour in vegetable broth and diced tomatoes. Bring to a simmer while stirring.
  4. Add Meatballs: Carefully drop meatballs into the simmering broth. Cook for 15-20 minutes until they float to the top and are cooked through.
  5. Season & Serve: Taste and adjust seasoning as needed. Ladle into bowls and garnish with extra herbs or Parmesan.
