  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium chicken broth
  • 2 tsp Italian seasoning
  • ¼ cup fresh basil, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by dicing the onion, carrots, celery, and mincing the garlic.
  2. In a large pot over medium heat, add olive oil. Sauté the onions, carrots, and celery until softened (5-7 minutes).
  3. Add ground chicken to the pot and cook until browned (8-10 minutes), breaking it apart with a wooden spoon.
  4. Stir in minced garlic and Italian seasoning; cook until fragrant (1 minute).
  5. Add diced tomatoes (with juices) and chicken broth; bring to a simmer.
  6. Allow to simmer for 20 minutes on low heat. Stir in fresh basil before serving.
