  • 1 tsp coarse sea salt
  • 1/2 tsp freshly cracked black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Carefully cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Brush the cut sides with olive oil and season with salt and pepper.
  4. Place the squash cut-side down on a baking sheet lined with parchment paper.
  5. Roast for 30-40 minutes until tender; it should easily shred into strands with a fork.
  6. Let cool slightly, then scrape out the flesh to create noodle-like strands.
