  • 4 salmon fillets (about 6 oz each)
  • 1/2 cup mango puree
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1 tsp sesame oil
  • 2 green onions, chopped (for garnish)
  • 1 tbsp toasted sesame seeds (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together mango puree, soy sauce, honey, garlic, ginger, and sesame oil until smooth.
  3. Place salmon fillets skin-side down on the prepared baking sheet and pour half of the marinade over them.
  4. Bake for 15-20 minutes until the salmon flakes easily with a fork. Baste with reserved marinade halfway through cooking.
  5. Once cooked, garnish with green onions and toasted sesame seeds before serving.
