  • 1 cup grated zucchini (about 1 medium zucchini)
  • 1 cup fresh corn kernels (or frozen)
  • ¾ cup plain breadcrumbs
  • 1 large egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ½ tsp pepper
  • 2 tbsp olive oil (for cooking)

Instructions

  1. In a large bowl, mix ground chicken, grated zucchini, corn, breadcrumbs, beaten egg, garlic powder, onion powder, salt, and pepper until well combined.
  2. Moisten your hands slightly and form the mixture into patties about ½ inch thick. Place them on a parchment-lined platter.
  3. Heat olive oil in a grill or skillet over medium-high heat. Once hot, add the burgers.
  4. Cook for 5-6 minutes per side until golden brown and the internal temperature reaches 165°F (74°C).
