  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 2 cups mixed vegetables (bell peppers and broccoli)
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Wash and chop mixed vegetables into bite-sized pieces.
  2. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then add them to the skillet.
  3. Sear chicken for 5-7 minutes on each side until golden brown. Remove from pan and set aside.
  4. In the same skillet, sauté minced garlic until fragrant (about 30 seconds). Add mixed vegetables and cook for 3-4 minutes until tender.
  5. Pour in the heavy cream and chicken broth, stirring continuously while scraping up brown bits from the skillet. Let simmer until slightly thickened.
  6. Return seared chicken to the skillet, spoon sauce over it, and let it simmer together on low heat for an additional 5 minutes.
