  • 1 medium Onion, diced
  • 4 cloves Garlic, minced
  • 1 can (14.5 oz) Canned Diced Tomatoes (fire-roasted recommended)
  • 4 cups Chicken Broth (low-sodium)
  • 8 oz Lasagna Noodles, broken into pieces
  • 15 oz Ricotta Cheese (whole milk preferred)
  • 2 cups Shredded Mozzarella Cheese
  • 2 tsp Italian Seasoning
  • 2 cups Fresh Spinach or Kale
  • ¼ cup Pine Nuts (optional)

Instructions

  1. In a large pot over medium heat, cook the ground Italian sausage until browned. Add diced onions and minced garlic; sauté until onions are soft.
  2. Stir in canned diced tomatoes with their juices and chicken broth. Bring to a simmer.
  3. Add broken lasagna noodles to the pot and cook for about 10 minutes until al dente.
  4. Reduce heat slightly and mix in ricotta cheese until melted. Gradually add shredded mozzarella while stirring.
  5. Fold in fresh spinach or kale just before serving until wilted.
