  • 1 cup chopped celery

  • 1/2 cup ketchup (plus more for topping)
  • 2 cups low-sodium vegetable broth

Instructions

  1. Rinse lentils under cold water; boil in vegetable broth until tender (about 20 minutes).
  2. In a skillet, sauté onion, carrots, and celery over medium heat until softened (about 5 minutes).
  3. Add garlic, thyme, and smoked paprika; cook until fragrant.
  4. In a large bowl, combine cooked lentils, sautéed veggies, oats, and ketchup until mixed well.
  5. Mold mixture into a greased loaf pan; bake at 350°F (175°C) for about 45 minutes or until golden brown.
