  • 1 vanilla bean (split) or 2 teaspoons vanilla extract
  • 1 tablespoon gelatin powder
  • 2 cups fresh strawberries (hulled)
  • 1 tablespoon lemon juice

Instructions

  1. In a saucepan over low heat, combine heavy cream, sugar, and split vanilla bean until dissolved, stirring gently.
  2. In a small bowl, sprinkle gelatin over 3 tablespoons cold water; let sit for 5 minutes until bloomed.
  3. Remove the cream mixture from heat, add bloomed gelatin, and stir until completely melted.
  4. Pour panna cotta into serving cups or molds and refrigerate for at least 4 hours until set.
  5. Blend strawberries with sugar and lemon juice until smooth; strain if desired.
  6. Once panna cotta is set, pour strawberry gelée over each cup and chill for an additional hour before serving.
