  • 1 cup pumpkin puree (fresh or canned)
  • 1 cup heavy cream
  • 4 large egg yolks
  • 1/2 cup granulated sugar, plus extra for topping
  • 1 tsp pure vanilla extract
  • 1 tsp pumpkin pie spice
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a mixing bowl, whisk together pumpkin puree, heavy cream, sugar, vanilla extract, egg yolks, pumpkin pie spice, and salt until smooth.
  3. Divide the mixture among ramekins and place them in a baking dish.
  4. Fill the baking dish with hot water halfway up the sides of ramekins.
  5. Bake for 30-40 minutes until just set but slightly jiggly in the center.
  6. Cool at room temperature before refrigerating for at least 4 hours.
  7. When ready to serve, sprinkle sugar over each custard and caramelize using a kitchen torch or broiler.
