  • 2 pounds Yukon Gold potatoes
  • 1 head fresh garlic
  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter
  • Salt and pepper to taste
  • Chives (optional garnish)

Instructions

  1. Peel and chop the Yukon Gold potatoes into evenly sized chunks.
  2. Preheat the oven to 400°F (200°C). Wrap whole garlic cloves in aluminum foil with olive oil and roast for approximately 25 minutes until soft.
  3. Boil the chopped potatoes in salted water until fork-tender, about 15-20 minutes.
  4. Drain the potatoes and return them to the pot over low heat. Add roasted garlic, butter, and heavy cream; mash until smooth.
  5. Season with salt and pepper to taste before serving warm. Optionally top with chives.
