Instructions
- Preheat the oven to 400°F (200°C). Wrap the garlic in foil with a drizzle of olive oil and roast for about 30 minutes until soft.
- Place potato chunks in cold salted water in a large pot. Bring to a boil over medium heat and cook for 15-20 minutes until tender.
- Drain the potatoes and return them to the pot. Mash until smooth.
