  • 2 lbs Yukon Gold potatoes, peeled and chopped
  • 1 whole head of fresh garlic
  • 4 tbsp unsalted butter
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap the garlic in foil with a drizzle of olive oil and roast for about 30 minutes until soft.
  2. Place potato chunks in cold salted water in a large pot. Bring to a boil over medium heat and cook for 15-20 minutes until tender.
  3. Drain the potatoes and return them to the pot. Mash until smooth.
  4. Mix in warm butter, followed by heavy cream until desired consistency is achieved.
  5. Squeeze roasted garlic cloves into the potatoes; stir well and season with salt and pepper.
  6. Serve hot, garnished with fresh chives or parsley if desired.
