  • 1 ½ cups crushed sugar cookies
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, room temperature
  • 1 cup sour cream
  • ¾ cup granulated sugar
  • 3 large eggs, room temperature
  • 2 tsp vanilla extract
  • 1 cup white chocolate chips
  • ½ cup heavy cream
  • Pinch of salt

Instructions

  1. Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In a bowl, mix crushed sugar cookies with melted butter; press firmly into the bottom of the pan.
  3. Beat cream cheese until smooth; gradually add sour cream, sugar, vanilla extract, and eggs. Mix until fluffy.
  4. Pour filling over the cookie crust; bake for 45-50 minutes or until slightly jiggly in the center.
  5. Heat heavy cream until simmering; pour over white chocolate chips and stir until smooth to create ganache.
  6. Cool cheesecake completely before pouring ganache on top. Chill for at least four hours before serving.
