  • 2 tbsp fresh ground black and green peppercorns
  • 1 cup heavy cream
  • 1 cup low-sodium beef broth
  • 2 tbsp unsalted butter
  • 4 garlic cloves, whole
  • 2 shallots, finely chopped
  • 2 tbsp olive oil
  • ¼ cup white wine (optional)
  • Fresh herbs (like thyme) to taste

Instructions

  1. Take the steak out of the fridge at least 30 minutes before cooking. Season both sides with salt and freshly ground pepper.
  2. Preheat a skillet over medium-high heat and add olive oil until shimmering. Sear the steak for 4-5 minutes without moving it, then flip and cook for an additional 3-4 minutes until desired doneness.
  3. Remove the steak and cover loosely with foil to rest. In the same skillet, lower the heat to medium, add butter, chopped shallots, and garlic; sauté for about 2 minutes.
  4. Pour in beef broth (and white wine if using), scraping any brown bits from the pan. Simmer for 3-4 minutes.
  5. Stir in heavy cream and peppercorns; let simmer on low heat until slightly thickened (3-5 minutes).
  6. Serve the steak topped with the creamy sauce alongside your favorite sides.
