Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/2 cup creamy peanut butter
  • 1/4 cup low-sodium soy sauce
  • 1 cup full-fat coconut milk
  • Juice of 2 limes
  • 2 cups mixed vegetables (bell peppers, carrots)
  • 2 cups cooked jasmine rice or quinoa
  • Fresh cilantro or green onions for garnish

Instructions

  1. Marinate the chicken by combining sliced breasts with soy sauce, minced garlic, lime juice, and half of the peanut butter. Let it sit while preparing other ingredients.
  2. Heat vegetable oil in a skillet over medium-high heat and sauté marinated chicken until golden brown and cooked through (7-10 minutes).
  3. In a small saucepan, mix remaining peanut butter with coconut milk over low heat until smooth; adjust lime juice to taste.
  4. Add sliced vegetables to the skillet during the last minute of cooking; sauté until slightly softened but still crunchy.
  5. Pour the warm peanut sauce over the chicken and vegetables, tossing gently to coat.
  6. Serve over cooked rice or quinoa, garnished with fresh cilantro or green onions.
