Layered with fresh zucchini, rich marinara sauce, and a blend of creamy cheeses, this dish is topped with crispy garlic croutons for an irresistible crunch.   • 4 medium zucchinis (sliced into 1/4-inch rounds)
  • 2 cups marinara sauce
  • 15 oz ricotta cheese (whole milk)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup garlic croutons (store-bought or homemade)
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C) and line a sheet pan with parchment paper.
  2. Arrange half of the marinara sauce on the bottom of the prepared pan. Layer zucchini slices over the sauce.
  3. Add dollops of ricotta cheese, followed by a generous sprinkle of mozzarella and Parmesan cheese. Season with Italian seasoning.
  4. Repeat the layering process until ingredients are used up, finishing with mozzarella and croutons on top. Drizzle with olive oil.
  5. Bake for 30-35 minutes until golden brown and bubbly. Let cool for 10 minutes before slicing and serving.
