Ingredients
Scale
- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 6 fresh scallions, chopped (reserve half for garnish)
- 1/4 cup low-sodium soy sauce
- 2 tbsp brown sugar
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp cornstarch
- 2 tbsp vegetable oil (canola preferred)
Instructions
- Prepare the scallions by chopping them into small pieces; set aside half for garnish. Mince the garlic and grate the ginger.
- In a bowl, mix soy sauce, brown sugar, garlic, ginger, and cornstarch. Add chicken breasts and coat well in the marinade; let sit for at least 30 minutes.
- Heat vegetable oil over medium-high heat in a large skillet until shimmering. Add marinated chicken and cook for about 5-7 minutes per side until golden brown and cooked through.
- During the last few minutes of cooking, add chopped scallions to the skillet until softened but still vibrant. Pour any leftover marinade into the pan to create sauce.
- Transfer the Scallion Chicken to a serving platter and garnish with reserved scallions.
