  • 1 medium butternut squash (about 2 cups cubed)
  • 1 medium tart apple (like Granny Smith), thinly sliced
  • 8 oz fresh burrata cheese
  • 1 lb pizza dough
  • 2 tbsp extra virgin olive oil
  • 46 fresh sage leaves, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and cube the butternut squash into bite-sized pieces. Toss with 1 tablespoon of olive oil, salt, pepper, and chopped sage. Spread on a baking sheet and roast for 25-30 minutes until tender.
  3. While the squash roasts, sauté sliced apples in a pan with the remaining olive oil over medium heat for about 5 minutes until slightly caramelized.
  4. Roll out the pizza dough on parchment paper to a 12-inch round.
  5. Spread roasted butternut squash evenly over the dough, add sautéed apples, and tear pieces of burrata on top.
  6. Bake for 15-20 minutes until the crust is golden brown.
