  • 1 tsp almond extract
  • 1/4 cup raspberry jam (preferably homemade)
  • 2 tbsp sliced almonds

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together the softened butter and sugar until light and fluffy (about 3–5 minutes).
  3. Mix in the egg yolk and almond extract until combined.
  4. Gradually add flour, mixing gently until a soft dough forms.
  5. Roll tablespoons of dough into balls and place them on the prepared baking sheet, leaving space between each.
  6. Create an indentation in the center of each ball using your thumb or the end of a wooden spoon.
  7. Spoon raspberry jam into each thumbprint without overfilling, then sprinkle with sliced almonds.
  8. Bake for 12–15 minutes or until lightly golden around the edges. Cool on the baking sheet for 5 minutes before transferring to wire racks.
