Description

  • 1 cup canned pumpkin puree
  • 1 cup brown sugar

  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • ½ cup walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together oats, flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix pumpkin puree, brown sugar, eggs, and vanilla until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until just combined; avoid over-mixing.
  5. Stir in chopped nuts if desired.
  6. Pour the batter into the prepared baking dish and bake for 25-30 minutes or until golden brown.
  7. Allow cooling before slicing into squares.
