Instructions

  3. In another bowl, mix pumpkin puree, eggs, oil, and vanilla extract until smooth.
  4. Gently fold the wet mixture into the dry ingredients until just combined; do not over-mix.
  5. Fill each muffin cup about two-thirds full with batter and bake for 18-20 minutes or until a toothpick inserted comes out clean.
  6. Allow to cool before frosting with cream cheese icing.
