  • 12 oz frozen pork or chicken potstickers
  • 1 cup bell peppers, sliced (red, yellow, or green)
  • 1 cup carrots, julienned
  • 2 cups bok choy, roughly chopped
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 green onions, chopped
  • Red pepper flakes (optional)

Instructions

  1. Prepare your vegetables by washing and slicing the bell peppers, julienning the carrots, and chopping the bok choy.
  2. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add minced garlic and grated ginger; sauté for about 30 seconds until fragrant.
  3. Add frozen potstickers to the skillet and sear for 3-4 minutes until golden brown on one side. Gently flip with a spatula.
  4. Toss in sliced bell peppers, julienned carrots, and bok choy. Stir-fry for another 5-7 minutes until vegetables are tender yet crisp.
  5. Drizzle soy sauce and sesame oil over the stir-fry; toss everything together to evenly coat.
  6. Serve hot with chopped green onions sprinkled on top.
