  • 9 no-boil lasagna noodles
  • 15 oz whole milk ricotta cheese
  • 1 medium zucchini (diced)
  • 4 cups fresh spinach
  • 2 cups marinara sauce
  • 1/4 cup fresh basil leaves
  • 2 cups shredded whole milk mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté diced zucchini and spinach until softened (about 5 minutes).
  3. In a bowl, mix ricotta cheese with basil, salt, and pepper.
  4. In a baking dish, spread a thin layer of marinara sauce, place a layer of noodles, half of the ricotta mixture, sautéed vegetables, mozzarella cheese, and more marinara sauce. Repeat layers until ingredients are used.
  5. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake an additional 15-20 minutes until bubbly and golden.
  6. Let the lasagna rest for 10-15 minutes before slicing.
