- 9 no-boil lasagna noodles
- 15 oz whole milk ricotta cheese
- 1 medium zucchini (diced)
- 4 cups fresh spinach
- 2 cups marinara sauce
- 1/4 cup fresh basil leaves
- 2 cups shredded whole milk mozzarella cheese
- 1/2 cup freshly grated Parmesan cheese
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Sauté diced zucchini and spinach until softened (about 5 minutes).
- In a bowl, mix ricotta cheese with basil, salt, and pepper.
- In a baking dish, spread a thin layer of marinara sauce, place a layer of noodles, half of the ricotta mixture, sautéed vegetables, mozzarella cheese, and more marinara sauce. Repeat layers until ingredients are used.
- Cover with aluminum foil and bake for 25 minutes. Remove foil and bake an additional 15-20 minutes until bubbly and golden.
