  • 1 lb fresh salmon fillets, cut into bite-sized pieces
  • 2 tbsp jerk seasoning
  • 2 tbsp freshly squeezed lime juice
  • 2 tbsp extra virgin olive oil
  • 3 green onions, chopped (white and green parts)
  • 1 red bell pepper, diced
  • 3 garlic cloves, minced
  • 1 tsp kosher salt (adjust to taste)
  • ½ tsp black pepper (adjust to taste)

Instructions

  1. In a bowl, combine jerk seasoning, lime juice, olive oil, minced garlic, salt, and pepper. Add salmon pieces and toss to coat. Let marinate for at least 30 minutes.
  2. While marinating, chop green onions and dice red bell pepper.
  3. Preheat oven to 425°F (220°C) or heat grill to medium-high.
  4. Thread marinated salmon pieces onto skewers alternating with bell pepper and green onions for visual appeal.
