  • 4 whole wheat wraps (large)
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 cup crumbled feta cheese
  • 2 cups baby spinach, chopped
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, thinly sliced
  • 1 small red onion, thinly sliced
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • 2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: Rinse chickpeas under cold water until no foam appears.
  2. In a mixing bowl, combine chickpeas, feta cheese, spinach, tomatoes, cucumber, and onion. Drizzle with olive oil and lemon juice; sprinkle oregano on top.
  3. Gently stir the mixture until combined and colorful. Season with salt and pepper as desired.
  4. Lay a whole wheat wrap flat; spoon filling onto the center while leaving space around the edges.
  5. Fold in the sides and roll tightly from one end to the other. Secure with toothpicks if needed.
