- 4 boneless, skinless chicken breasts
- 1 cup seasoned breadcrumbs
- 1 cup full-fat cottage cheese
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- ¼ cup fresh basil, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
- Pat chicken breasts dry, season both sides with salt and pepper.
- Heat olive oil in a skillet over medium heat. Sear each chicken breast for about 5 minutes per side until golden brown.
- Spread half of the marinara sauce on the bottom of the baking dish. Place seared chicken on top.
- Spoon cottage cheese over each piece, then pour remaining marinara sauce over everything.
- Sprinkle shredded mozzarella on top and garnish with fresh basil.
- Bake uncovered for 25-30 minutes until cheese is bubbly and golden brown. Let sit for 5 minutes before serving.
