  • 34 boneless skinless chicken breasts
  • 1 can (15 oz) low-sodium chickpeas, rinsed and drained
  • 4 cups fresh baby spinach
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 small red onion, thinly sliced
  • Juice of 1 lemon
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat grill or stovetop pan over medium heat. Season chicken with salt and pepper. Grill for 6-7 minutes per side until cooked through. Let cool before chopping.
  2. While chicken cooks, rinse chickpeas, chop spinach, halve cherry tomatoes, and dice cucumber.
  3. In a small bowl, whisk lemon juice with olive oil; season with salt and pepper.
  4. In a large bowl, combine chopped chicken, chickpeas, spinach, tomatoes, cucumber, and onion. Drizzle dressing over the top and toss gently.
  5. Serve immediately or chill in the fridge before serving.
