  • 6 large hard-boiled eggs
  • 1/3 cup mayonnaise
  • 2 tsp curry powder
  • 1 tsp Dijon mustard
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper (adjust to taste)
  • 1 tbsp lemon juice (freshly squeezed)
  • Fresh cilantro or parsley (for garnish)

Instructions

  1. Hard-boil the eggs by placing them in a pot covered with water. Bring to a boil, then simmer for 10-12 minutes.
  2. Cool the eggs in an ice bath for about 10 minutes for easy peeling.
  3. Cut the cooled eggs in half lengthwise and scoop out yolks into a mixing bowl.
  4. Add mayonnaise, curry powder, mustard, lemon juice, salt, and pepper to the yolks. Mash until creamy and well combined.
  5. Spoon or pipe the filling back into the egg white halves.
  6. Garnish with chopped cilantro or parsley before serving.
