  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 cup smooth peanut butter
  • 1 can (13.5 oz) full-fat coconut milk
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • Juice of 1 lime
  • 1 tsp red pepper flakes (adjust to taste)

Instructions

  1. Chop chicken breasts into bite-sized pieces and mince the garlic.
  2. In the slow cooker, combine chicken, garlic, peanut butter, coconut milk, soy sauce, brown sugar, lime juice, and red pepper flakes. Stir until well mixed.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, shred the chicken in the pot using two forks and mix well.
