- 1 lb lean ground beef or turkey
- 1 packet taco seasoning (about 1 oz)
- 14.5 oz diced tomatoes (canned)
- 1 cup shredded cheddar cheese
- 1 can (15 oz) black beans, rinsed and drained
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 cups low-sodium chicken broth
Instructions
- Sauté onion and bell pepper in a skillet over medium heat for about 5 minutes until tender.
- Add ground beef or turkey to the skillet; cook until browned. Drain excess fat.
