  • 2 boneless, skinless chicken breasts (about 1 pound)
  • 3 cloves fresh garlic, minced
  • 8 oz fettuccine or linguine pasta
  • 1 cup ricotta cheese
  • 2 cups fresh baby spinach
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: chop garlic, measure pasta.
  2. Cook the chicken in olive oil over medium heat until golden brown (6-7 minutes per side) and internal temperature reaches 165°F (75°C). Remove from skillet.
  3. In the same skillet, sauté garlic until fragrant (30 seconds), then add spinach until wilted.
  4. Lower heat and stir in ricotta and Parmesan, adding reserved pasta water for creaminess.
  5. Cook pasta according to package instructions; drain and reserve some water.
  6. Slice chicken and return it to the skillet with the sauce and pasta. Toss until well combined.
