  • 45 lb beef roast (chuck or round)
  • 1 cup cranberry sauce (smooth)
  • 1/2 cup balsamic vinegar
  • 4 cloves garlic (minced)
  • 2 tsp fresh thyme (or 1 tsp dried)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp extra virgin olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium-high heat. Sear the beef roast for about 5 minutes on each side until golden brown.
  3. In a bowl, whisk together cranberry sauce, balsamic vinegar, garlic, thyme, salt, and pepper to create the glaze.

  5. Roast uncovered for about 1 hour or until the internal temperature reaches 135°F (57°C) for medium-rare.
