  • 1 ½ cups all-purpose flour
  • 1/3 cup vegetable oil or melted butter
  • 1/4 cup milk or yogurt
  • 2 large eggs
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • Cinnamon sugar mixture (1/4 cup sugar + 2 tsp cinnamon)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mash the bananas until smooth, leaving some chunks for texture.
  3. Mix in the eggs, oil (or butter), and milk (or yogurt) until well combined.
  4. In another bowl, whisk together flour, baking soda, salt, and cinnamon.
  5. Gently fold the wet ingredients into the dry ingredients until just combined.
  6. Layer half of the batter into the loaf pan, sprinkle with half of the cinnamon sugar mixture, then top with remaining batter and cinnamon sugar.
  7. Bake for about 60 minutes or until a toothpick comes out clean. Cool for 10 minutes before transferring to a wire rack.
