  • ¼ cup brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp baking soda

  • ⅓ cup unsalted butter, melted
  • 1 tsp vanilla extract
  • For the streusel topping: ¼ cup all-purpose flour
  • ¼ cup granulated sugar
  • 2 tbsp unsalted butter, melted
  • ½ tsp ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
  2. In a large bowl, mash the ripe bananas until smooth but still chunky.
  3. In another bowl, whisk together the flour, baking soda, salt, sugars, and cinnamon.
  4. Combine melted butter, eggs, and vanilla with the banana mixture; stir until just mixed.
  5. Gradually fold in the dry ingredients until no flour streaks remain.
  6. For the streusel topping, mix flour, sugar, butter, and cinnamon until crumbly; sprinkle over the batter before baking.
  7. Bake for 60-70 minutes or until a toothpick comes out clean from the center. Allow cooling slightly before slicing.
