  • 3 cloves fresh garlic, minced
  • 8 oz spaghetti or linguine
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 8 oz mushrooms, sliced (optional)
  • 1 cup frozen peas
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C). In a skillet, heat oil over medium heat. Cook seasoned chicken breasts for about 6-7 minutes per side until golden brown and cooked through.
  2. Add minced garlic and sliced mushrooms to the skillet. Cook for about 5 minutes until tender and fragrant.
  3. Pour in heavy cream and chicken broth. Stir until bubbling, then mix in grated Parmesan until melted.
  4. Cook pasta according to package instructions until al dente. Drain and toss with olive oil.
  5. In a large bowl, combine cooked chicken cubes, sautéed vegetables, peas, pasta, and sauce until well mixed. Transfer to a greased baking dish.
