  • 2 cloves fresh garlic, minced
  • 8 oz spaghetti or linguine
  • 1 cup heavy cream
  • 1 cup low-sodium vegetable broth
  • 1 cup shredded sharp cheddar cheese
  • 8 oz mushrooms, sliced
  • 1/4 cup grated Parmesan cheese
  • 1 cup frozen peas
  • 2 tsp Italian seasoning blend
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Chop the chicken into bite-sized pieces, season with salt and pepper, and set aside.
  2. In a large skillet over medium heat, melt butter. Add garlic and mushrooms; sauté until golden brown (5-7 minutes).
  3. Boil salted water in a large pot; cook pasta until al dente according to package instructions. Drain and set aside.
  4. In the skillet, add heavy cream and vegetable broth to the sautéed vegetables. Stir in Italian seasoning; simmer for about 5 minutes.
  5. Add cooked chicken pieces and frozen peas into the creamy mixture; combine well.
  6. In a large baking dish, mix pasta with the creamy chicken mixture. Top with shredded cheddar and sprinkle Parmesan before baking.
