  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 medium sweet potatoes (about 1 lb), peeled and cubed
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 cup bell peppers, sliced (mixed colors)
  • 1 medium red onion, sliced
  • Juice of 1 lime

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss cubed sweet potatoes with olive oil, salt, and half of the Cajun seasoning. Spread on a baking sheet.
  3. Roast sweet potatoes for 25-30 minutes until golden brown, flipping halfway through.
  4. While sweet potatoes roast, heat olive oil in a skillet over medium-high heat. Season chicken with remaining Cajun seasoning and sear for about 6-7 minutes per side until golden brown.
  5. Remove chicken from the skillet; add bell peppers and onion. Sauté until softened.
  6. Slice the rested chicken and combine it with roasted sweet potatoes and sautéed vegetables in a bowl. Drizzle with lime juice before serving.
