  • 2 cups butternut squash, peeled and cubed
  • 1 cup all-purpose flour

  • 2 tbsp olive oil (for frying)

Instructions

  1. Boil cubed squash in salted water for about 15 minutes until tender. Drain and mash until smooth.
  2. Combine mashed squash with flour, eggs, green onions, garlic powder, cumin, salt, and pepper. Mix well until incorporated.
  3. In a skillet over medium heat, add olive oil. Allow it to heat without smoking.
  4. Portion out the batter using a spoon or ice cream scoop into the hot oil. Flatten each scoop slightly and fry for 3-4 minutes on each side until golden brown.
  5. Transfer fritters to a paper towel-lined plate to drain excess oil. Serve hot with your favorite dipping sauce or enjoy them plain.
