  • 8 oz broccoli rabe
  • 8 oz fresh burrata cheese
  • 2 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • ¼ cup grated Parmesan cheese
  • ¼ tsp red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Prepare the broccoli rabe by washing it under cold water, trimming tough ends, then blanching in boiling salted water for 2-3 minutes. Shock in ice water.
  2. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1 minute).
  3. Add blanched broccoli rabe to the skillet, sautéing for an additional 3-4 minutes. Season with salt, pepper, and red pepper flakes if desired.
  4. Preheat your oven to 475°F (245°C).
  5. Roll out the pizza dough on a floured surface to your desired thickness and transfer it onto a parchment-lined baking sheet.
  6. Spread sautéed broccoli rabe evenly on top of the dough, followed by generous dollops of burrata cheese.
  7. Bake for 12-15 minutes until golden brown and bubbly.
