Description

  • 8 cups stale bread, cubed
  • 2 cups fresh apples (Honeycrisp or Fuji), diced
  • 1 cup dried cranberries
  • 1 large onion, chopped
  • 2 stalks celery, chopped
  • 4 cups low-sodium vegetable broth
  • 1 tsp dried sage
  • 1 tsp dried thyme
  • 2 eggs
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and grease a large baking dish.
  2. In a skillet over medium heat, melt 2 tablespoons of butter. Sauté the onion and celery until softened (about 5 minutes).
  3. Add the diced apples and cranberries to the skillet and cook for another 3 minutes. Stir in sage and thyme.
  4. In a large bowl, combine the cubed bread with the sautéed mixture. Gradually pour in vegetable broth while stirring until moistened.
  5. Whisk the eggs separately and add them to the mixture along with salt and pepper.
  6. Transfer the stuffing to the greased baking dish and bake uncovered for 30-35 minutes until golden brown.
