- 2 cups fresh apples (Honeycrisp or Fuji), diced
- 1 cup dried cranberries
- 1 large onion, chopped
- 2 stalks celery, chopped
- 4 cups low-sodium vegetable broth
- 1 tsp dried sage
- 1 tsp dried thyme
- 2 eggs
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C) and grease a large baking dish.
- In a skillet over medium heat, melt 2 tablespoons of butter. Sauté the onion and celery until softened (about 5 minutes).
- Add the diced apples and cranberries to the skillet and cook for another 3 minutes. Stir in sage and thyme.
- In a large bowl, combine the cubed bread with the sautéed mixture. Gradually pour in vegetable broth while stirring until moistened.
- Whisk the eggs separately and add them to the mixture along with salt and pepper.
- Transfer the stuffing to the greased baking dish and bake uncovered for 30-35 minutes until golden brown.
