  • 2 medium sweet potatoes (about 2 cups, diced)
  • 1 can (15 oz) low-sodium black beans, rinsed and drained
  • 1 can (28 oz) crushed tomatoes
  • 1 medium red onion, chopped
  • 1 bell pepper (any color), chopped
  • 4 cups low-sodium vegetable broth
  • 2 tsp cumin
  • 2 tsp chili powder
  • 3 cloves garlic, minced
  • Juice of 1 lime

Instructions

  1. Peel and dice the sweet potatoes into bite-sized cubes. Chop the onions and bell pepper.
  2. In a large pot, heat 2 tsp olive oil over medium heat. Add the onions and garlic; sauté until fragrant, about 3 minutes.
  3. Stir in the sweet potatoes, cumin, and chili powder. Cook for another 5 minutes.
  4. Add black beans, crushed tomatoes, and vegetable broth; stir to combine.
  5. Bring to a gentle boil, then reduce heat and let simmer uncovered for about 30 minutes until sweet potatoes are tender.
  6. Just before serving, squeeze fresh lime juice into the pot.
