  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cups fresh salsa verde
  • 1 cup long-grain white rice
  • 4 cups low-sodium chicken broth
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1/2 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 tsp cumin
  • 1 tsp chili powder

Instructions

  1. Chop onion and garlic finely; set aside.
  2. In a large pot over medium heat, add olive oil and sauté onion and garlic until translucent.
  3. Add chicken breasts and chicken broth; bring to a simmer while stirring occasionally.
  4. Stir in salsa verde, cumin, and chili powder; simmer for about 20 minutes.
  5. Add rice to the pot; continue simmering until rice is tender.
  6. Remove from heat and stir in chopped cilantro and lime juice before serving hot.
