  • 8 oz rice noodles
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp lime juice (freshly squeezed)
  • 1/4 cup cilantro (optional), chopped

Instructions

  1. In a large skillet over medium heat, sauté the diced chicken until golden brown and cooked through (5–7 minutes).
  2. While the chicken cooks, boil the rice noodles according to package instructions until tender but al dente (4–6 minutes).
  3. In a bowl, whisk together peanut butter, soy sauce, lime juice, and minced garlic until smooth.
  4. During the last minute of cooking the noodles, add sliced bell peppers and carrots. Drain everything together.
  5. Combine the drained noodles and vegetables with the chicken in the skillet and pour in the peanut sauce. Toss until evenly coated over low heat.
